Recipe of the Week: No-Bake Berry Cheesecake

Dang it's gotten hot quickly here in Houston! There's no doubt that summer has got a grip on us right now. So, if you're like me sometimes you look for ways to put together great dishes without turning on an oven or a stovetop. And I also wanted one that used some of the awesome produce that is so plentiful this time of year. And that just screams BERRIES! So, this week I went in search of one such recipe. What I came across fits the bill perfectly...tasty, sweet, and NO-BAKE! So, this week's Recipe of the Week is No-Bake Berry Cheesecake from one of my favorite blogs, Mandy's Recipe Box (a site I have featured on this blog before).

So, here are some of the highlights of what you need to know about this recipe. First, it uses strawberries, blueberries, and raspberries on a buttery graham cracker crust. Go ahead and give an "Oh yeah!" It will take about an hour and fifteen minutes or so - mostly because the dessert needs a minimum of an hour in the fridge. 

And folks this recipe is super easy (also great for a summer dessert)! In an 8"x8" or 9"x9" baking dish, mix melted butter and graham cracker crumbs together and press them into the bottom of the dish. Then you take a mixing bowl and you beat together cream cheese and powdered sugar (2 cups worth! Mmmmm.). Then add in some whipped topping and combine everything together. You spread this cream cheese mixture over the graham cracker crust and put berries all over the top. Then it's into the fridge for at least an hour and it's done. Easy! Now all you need to do is slice 'er up and enjoy your nice cool dessert.
