Recipe of the Week: Fresh Apple Cinnamon Scones

Each week I’ll pick a recipe that just really sounds awesome - and I’ll share it with you. This week’s recipe comes from King Arthur Flour. Here’s a link to their Fresh Apple Cinnamon Scones recipe: http://bit.ly/1QCWQuv.  It’s perfect for the beginning of Fall - freshly diced apples, cinnamon/apple pie spice, cinnamon chips. As the recipe intro says, your kitchen will “smell like Fall day”. Be sure to give it a try. It’s relatively easy - and can be made the night before and reheated for breakfast.  

A few notes to think about before you start.      

  • It can take up to about an hour to make.     
  • Just before baking the recipe calls for putting the dough in the freezer for about 30 minutes (uncovered) after cutting into shape. Why? In the words of the baking experts at King Arthur: “Because 30 minutes in the freezer relaxes the gluten in the flour, which makes the scones more tender and allows them to rise higher. It also chills the fat, which will make the scones a bit flakier.”
  • To reheat room-temperature scones, place on a baking sheet, tent lightly with foil, and warm in a preheated 350°F oven for about 10 minutes.  In my humble opinion, this is a great one to try this week.
