For my Recipe of the Week this week, I'm going simple - but oh-so-Fall-y! As you know. spaghetti squash can be a food pasta replacement for kids (and, yes, us adults too!). It cuts down on the carbs and just plain tastes great. Those of you that have cooked with it know how versatile spaghetti squash it is. It's got a mild flavor which goes well with so many great flavors and spices.
When I saw this recipe with it's cheesiness and it's creaminess, I thought "OK, that's for me!" So, here's the link to my Recipe of the Week: Spaghetti Squash Alfredo.
One small hint. When you are thinking about timing for this dish, don't overlook the 45 minutes or so it will take you to cook the squash. It's no biggie - just something to remember. (As you know from my last blog post, timing has been on my mound this week!)
This recipe comes from a lovely blog called Mandy's Recipe Box. Mandy's "a complete country girl" (her words) who's married to a farmer in Idaho. She shares tons of great recipes. And be sure to check in on her on her Totally Tasty Tuesdays when she shares some of the other great recipes that have caught her eye (kinda like I'm doing here!).
