Recipe of the Week: Fresh Herb, Potato, and Goat Cheese Frittata

My favorite recipe this week comes from one of my favorite sites: This awesome - and simple frittata is great for SO many reasons. It's not difficult to make (just make sure you use an oven-ready pan) and is extremely flexible. It can be used for breakfast, brunch, lunch, or even dinner. And you can mix and match tons of different herbs to change it up often. and it can be used the next day too (assuming there's any left!)! What's more flexible than that?

Give yourself about 30 minutes to make this - not bad at all! And if you want to lighten it up a bit, you can substitute low fat or skim milk.
